How does Jun “treat” a duck

I would like to share with everyone how I handle a duck 🦆?

  1. I buy a duck from a Chinese super market where duck is often on sale.

2. I use the right tool to "peel" the duck skin off, which is not very difficult.

3. I "preserve" the duck with salt, so I don't have to eat it right away.  I can leave the duck in the refrigeration for about 3-4 days.  I stir fry the meat, or just put it on top of the rice when the rice is boiling.  Delicious!  That is my kids' lunch.

4. I cut the skin into pieces, and prepare to "burn" the oil out.

5. The most special part of a duck is the duck fat.  In case you don't realize it, here are nutritional facts of duck fat. But more health benefits about duck fat is here.  I used to buy duck fat and ghee from Amazon, but now I make my own duck fat, which is not only cheaper, but more fresh, and also fun.

I showed off my lunch on Facebook the other day.  It looks lovely, doesn't it?  When duck fat is used for cooking, please use ginger root to get rid of the gamy taste of the fat/meat.

My lunch: stir-fired egg, stir-fried salted duck meat, snow peas, and seaweed.  Side dish: chicken bone broth.
